Gnocchi Napoletani
These Gnocchi are part of the family of special short pastas. They are cone-shaped with three domes on the exterior and a hollow center. They can be enjoyed with light tomato sauces or meat sauces, or served with mozzarella or a salmon cream sauce.

Viti (Fusilli)
The Viti (commonly known as Fusilli) are part of the short pasta family with a straight edge cut and have a spiral shape. The term “fusillo” comes from “fuso”, which in English means “spindle”. They are wonderful when prepared with sauces with a base of ricotta or ragù. They are also excellent with a tomato sauce with vegetables like bell peppers, eggplant, olive and capers.
Mezze Maniche
The Mezze Maniche are part of the short pasta family with a straight edge cut and ridged exterior. The ideal sauces are those with meat or vegetables that are sufficiently liquid to be caught by the ridges and gather on the inside of the noodle.
Farfalle
Originating from Lombardia and Emilia, Farfalle take their name from their typical butterfly shape with the small, narrow ruffles in the middle. Farfalle are recommended with delicate sauces: a light sauce with peas and ham, white sauces that are not too strong in flavor like a creamy salmon or one with a soft cheese base.
Rigatoni
The Rigatoni are part of the short pasta family with a straight edge cut and ridged exterior. They are a versatile noodle and well suited to a variety of sauces with tomato or vegetable, however, they are most appropriate for meat sauces. They are best when the sauce is sufficiently liquid to be caught by the ridges and gather on the inside of the noodle.
Maccheroni
Maccheroni are part of the short pasta family with a straight edge cut and ridged exterior. They are known for the waved ridges. They are excellent when served with meat sauces and are also delicious with tomato sauces, vegetable sauces. They are also a perfect size for baked pastas.
